Italian Foods to Try When You Travel to Italy


If you ask us, the best part of traveling to Italy is sampling all the different Italian foods. Every region of Italy has it's own cuisine and local specialties, which you can try everywhere - from street vendors to Michelin-starred restaurants.

The next time you travel to Italy, here are some dishes you should sample:

Roman specialties.

Rome is best known for rustic cooking that's rich, meaty, and comforting on a cold, winter night. Braised beef and roasted suckling pig - porchetta - are very popular. But there's also lots of fresh produce so vegetarians can eat well in Rome too. Artichokes, known in Italy as carciofi, are available everywhere in spring. They're prepared many different ways, and they're absolutely delicious.

Zucchini flowers, zucca, are abundant in late summer and early autumn, when they're stuffed with cheese and anchovies and deep fried. You can sample both by ordering a Fritto Misto or mixed fried appetizer.

Rice croquettes, which are also deep fried, are another good choice for vegetarians. There's often a little square of cheese in the center that melts during frying. Gnocchi made with potatoes or semolina is often made without meat.

Two of Italy's most famous pasta dishes come from Rome - Bucatini All'Amatriciana and Spaghetti alla Carbonara. The first is made with tomatoes, onions, and pancetta, the second with eggs, pancetta, and Parmesan cheese.

Veal Saltimbocca is stuffed with sage leaves, ham, and cheese, then lightly breaded, sautéed, and baked. Adventurous eaters can sample organ meats at traditional Roman restaurants. Whatever you order, save room for the Roman version of cheesecake, Torta di Ricotta.

Neapolitan specialties.

When most Americans think of Italian food, it's southern Italian cooking that comes to mind. The cuisine developed around Naples features plenty of tomatoes, cheese, garlic, fresh herbs, and onions. The city of Naples serves the best pizza in the world. In fact, Neapolitan pizza is regulated by the Italian government, like Parma ham or Chianti. If you're traveling in Campania, as the region is called, eat pizza often.

Seafood is another good choice. In most cases, it's fresh from the Mediterranean and simply prepared - quickly grilled or sautéed, and finished with olive oil, lemon juice, and fresh herbs. Shellfish, including squid, shrimp, and mussels are often served in pasta dishes. And swordfish is wonderful here.

Meat is less popular here than in Rome, and cheese is a key ingredient in many dishes. It's used to fill pasta dishes like lasagna, cannelloni, or ravioli, and to top dishes like Eggplant Parmesan - Parmigiana di Melanzane. Mozzarella made from water buffalo milk is very popular.

Sfogliatelle is a wonderful dessert that combines ricotta cheese, almond paste, and puff pastry. What's not to like? The area around Sorrento is famous for its lemons and one of the best known products is Limoncello. Served ice cold, it can be enjoyed before or after meals.

Sicilian specialties.

An island off the west coast of Italy, Sicily has a tremendous history. Over the centuries, it's been ruled by many civilizations. And each had an influence on Sicilian food, which features bold, pungent flavors. Subtle, it's not. Fresh seafood, including swordfish, tuna, and sardines, is on the menu daily. And there are vegetables aplenty. One of the best-known Sicilian dishes is Caponata, a spicy blend of tomatoes, olives, onions, and peppers. It's delicious served on fish. Another local favorite is Panelle, which is made from fried ceci or garbanzo beans.

Sicilian desserts are some of the best in Italy. Cannoli, light pastry tubes filled with sweetened ricotta cheese, and Almond Biscuits are sold in bakeries all over the island. And the Sicilian Cassata - a cheescake made with ricotta and candied fruits and nuts - should not be missed.

Tuscan specialities.

Florentine cuisine is the simplest in Italy. The country's best beef comes from here. And no visit to Florence is complete without trying Bistecca alla Fiorentina - a thick, local steak that's been marinated with olive oil, garlic, and herbs, and then charcoal grilled. Beans, called fagioli, often accompany grilled meats and vegetables. And no Tuscan meal is complete without a glass of local red wine, such as Chianti or Montepulciano.

Game like boar, rabbit and duck are delicious braised in the wine. And cured meats, including Parma ham, are first rate. Salt Cod, or Baccala, is combined in an earthenware pot with tomatoes and garlic and baked until tender. Bread salad, Panzanella, and tomato soup, Pappa al Pomodoro, are popular at lunch. Bologna, in the northern part of Tuscany, is best known for its hearty meat sauce. For dessert, try lemon tart or the dense spice cake known as Panforte.

Food Allergies - What You Should Know


Food allergies, also known as hypersensitivity, effect between 1-2% of adults and can pose a real challenge for the sufferer. Though may people may have an intolerance for certain foods, a true food allergy is different. When an allergic person consumes an allergen, their immune system responds with a number of symptoms. The appearance of symptoms follows the digestive tract. The reaction may start with tingling or numbness in the lips and mouth, move downward to stomach cramping and digestive upset, then working through the blood stream can result in rashes or hives. The most serious form of reaction, called anaphylaxis, results in lowered blood pressure and swelling of the tongue and throat. This can stop airflow to the lungs and lead to death. In the US, there are an estimated 150 to 200 deaths a year caused by anaphylaxis.

Because the primary treatment for food allergies is simply avoiding the allergen, one of the biggest challenges for the food allergy sufferer is detecting hidden allergens that are present in many processed foods. In the U.S., food labels are required to list the eight most common allergens in "plain language". These eight foods - milk, egg, peanuts, tree nuts, wheat, shellfish, fish and soy, make up ninety percent of the allergic reactions. The labeling requirement has been very helpful to food allergy sufferers, but even clear labeling is no guarantee of purity for the most severely allergic, due to the potential for cross-contamination in the manufacturing process.

Cross-contamination occurs when the machines used to process an allergen-containing food then process a food that does not contain an allergen. Although the machinery has been cleaned, traces of the allergen can still be present and get into the food, leading to tragic results for an allergy sufferer. That is what makes living with food allergies difficult. Additionally, though labeling is required, some packaging is misleading in it's contents. For example, a product that is labeled "non-dairy" can still legally contain the milk protein casein, which is an allergen. Cross contamination can also occur after manufacturing. If a deli slices cheese on the same machine they use for meat, the meat can become cross contaminated with the milk proteins from the cheese.

So what is a food allergy sufferer to do? The first course of action is to educate themselves on labeling practices. Knowing where to look in a label for allergen information is a good first step. Avoiding foods that are labeled with the allergen is the primary method of treatment, since there is no cure for food allergy. Next, the food allergy sufferer must learn about ingredients that could contain allergens. For example, milk protein can appear under many labels and milk protein allergy can be caused by casein and whey. Both products are used as additives in manufacturing, even for some meat and fish products. Finally, the food allergy sufferer must know how to recognize the signs and how to treat himself or herself in case of anaphylaxis. This includes carrying and knowing how to use an epinephrine injector. A medical alert bracelet or necklace should also be worn at all times.

The classic formulation is make make a solution of one part sugar to four parts water. Most experts suggest that you use cane sugar (the white granulated type is fine.) Starting with one cup of water and 1/4 cup of sugar should be enough to begin with, but you can make more and store it if you want. Let it cool and then store it in the refrigerator. Try not to store it for more than a couple of weeks.

The water should be boiled first, this not only makes it easier to dissolve the sugar in the water, but helps eliminate the chlorine and any other baddies in the water.

Add the sugar at a rate of 1 cup of sugar for four cups of water. Note that you can depart from this ratio somewhat, and in fact in the wintertime you may want to add more sugar to boost the energy content of the mix. Stir the mixture until the sugar has dissolved.

Be sure to use real sugar, artificial sweeteners are "low calorie" which means they have no nutritional value, and would do the birds no good. Don't use honey, as it has different sugars (not the sucrose naturally found in nectar) and it tends to ferment quicker as well.

Natural nectar is odorless and clear, so there is no need to add food coloring to the mix, and the color of the feeder should be enough to attract your hummingbirds.

That's all there is to making your own humming bird food.

Homemade Fast Food Favorites

As tasty as fast food is, it simply isn't economical to dine out as often as we would like, particularly if you have a large family. So if dining in is to be your fate, why not make the best of it and enjoy a nice home-cooked spin on your favorite fast food dish? We've prepared a few instructions to get the meal you're craving at a price you can afford.

First up is the great American burger and fries. For this, you'll need some ground beef or ground steak, 1 egg, a dash or coriander and paprika, salt and pepper, about a tablespoon of Worcestershire sauce, and finely chopped onion. Adjust all of the seasonings and the onion to your taste preferences. Mix all the ingredients into a bowl until they're fully blended. Roll the seasoned meat into balls, and then flatten into a patty shape. Place in a slightly-oiled skillet on a medium heat (or on a barbecue grill) and cook thoroughly, turning occasionally. Top with condiments of your choice, such as onion, tomato, lettuce, pickles, ketchup/mustard, etc. If you can, toast your burger buns just before serving to give it that little extra something.

Remove them, pat them with paper towel, and allow them to cool. Put the Dutch oven back into the oven to heat to 375 degrees F. When the oil is heated, put the partially-cooked potatoes back into the oil for another 3 minutes. When they're done, remove them and pat off any excess oil. Serve hot.

Pizza is another fast food favorite that can put a nice spin on any night in. All you need is a packet of or tube of pizza dough (very cheap at your local grocery store), pizza sauce (also cheap, but you can make it yourself with a bit of tomato sauce and Italian seasonings), grated cheese, and the toppings of your choice. Simply roll out the dough, spread a bit of sauce evenly over the dough, sprinkle with cheese, and add the toppings of your choice. Ground beef, bacon, mushrooms, peppers, onions, and even pineapple are all tasty toppings that many people have on hand. Cook the pizza according to the instructions on the pizza dough package; serve hot and enjoy!

Another great fast food favorite is Long John Silvers's fish (or chicken). The batter for this is simple: 1 cup of plain flour, 1 tablespoon of baking powder, 1 teaspoon of baking soda, a bit of garlic, 1/2 cup of cornstarch, 1/4 tablespoon of salt, and 3/4 cup of water. Mix all of the ingredients until the batter is smooth. High fructose corn syrup (HFCS) not the cause of obesity:

In 2004 a series of scientific articles blamed obesity on high fructose corn syrup that became the major sweetener in soft drinks and many other foods. They cited evidence that fructose was only metabolized by the liver which turned the fructose into fat. Furthermore, HFCS lacked any effect on satiety. It became nutritional dogma that sugar was healthy, and high-fructose corn syrup was not. More recent evidence indicates that this is not true, the metabolic effects of HFCS are minimal and beverages sweetened with HFCS are no more fattening than other beverages with similar amount of sugar.

Mexican and European Sodas Have no HFCS:

One of the interesting side points made by many scientists is that pure cane sugar is used in Mexico and Europe. The incidence of obesity in these countries is approaching that in the US where HFCS is used almost exclusively.

Most of the studies compared HFCS with pure fructose:

HFSC is 50% fructose and 50% table sugar (white table sugar, which scientists call sucrose, is made from sugar cane or sugar beets and consists of 50% fructose and 50% glucose.)

Recent studies show all sugars are the same. This year more than five scientific studies found no link between HFCS and obesity.

Is High Fructose Corn Syrup the "Devil?"

One paper was written by Barry Popkin, a co-author on the original 2004 paper, who said

"It doesn't appear that when you consume high-fructose corn syrup, you have any different effect on appetite than if you consume any other sugar," he says. The kind of high-fructose syrup that sweetens almost all soft drinks in the USA is made from corn and consists of 55% fructose and 42% glucose, both of which are slightly different sugars. "People think high-fructose corn syrup is the devil and table sugar is natural," but that's not necessarily true, says Elizabeth Parks, a professor of clinical nutrition at the University of Texas Southwestern Medical Center in Dallas. "So far the research appears to show that sucrose and high-fructose corn syrup are not that different," Parks says. She believes there's some evidence that the way they are metabolized in the liver is different, but not in a significant way.

If it's not the kind of sugar in sodas, what is it?

It's the total amount of sugar and thus the calories: 15 teaspoons of sugar-250 calories whether it's from table sugar, HFCS, brown sugar or raw sugar.

The data presented indicated that HFCS is very similar to sucrose, being 55% fructose and 45% glucose, and thus, not surprisingly, few metabolic differences were found comparing HFCS and sucrose. That said, HFCS does contribute to added sugars and calories, and those concerned with managing their weight should be concerned about calories from beverages and other foods, regardless of HFCS content."

More than 1,000 new foods and drinks targeting women have hit the global market in the past four years. Nicknamed chick foods, these products include such things as the Luna Bar, Tab Energy drink, General Mills Harmony cereal, and Woman's Bread. Retail sales of women's food and beverages in 2004 were more than $4.5 billion, and sales are projected to reach $7.7 billion by 2009. Is the chick food market a lasting, lucrative one, or just a fad?

Women are usually the primary buyers of products such as foods and household items-more than $6 trillion a year, according to Time magazine. When more women began working outside the home in the 1970s, marketing efforts to reach them began in earnest. Nowadays, companies are trying to appeal to women less as the "do it all" consumer and more as someone with a strong self-image-self-assured, confident, and secure. "It has to be subtle, showing a woman in a position of power where she is respected," said Lisa Finn, the editor of the newsletter, Marketing to Women. Condescending to women, such as coloring a product pink, for example, may not go over well.

Designed to deal with health issues unique to women, such as PMS, pregnancy, lactation and menopause, or relating to aging, such as osteoporosis, heart disease, and cancer. Functional foods designed for women started to make the scene as early as the 1980s. The 1980s also saw a surge in new products with nutritional additives geared toward women, but they are expected to sell even better in the future as awareness of women's health issues continues to grow.

The Luna bar may have been the first obvious product marketed directly to women. Introduced in 1999, Luna bars are 100 percent natural and "contribute to women's nutrition" with ingredients such as green tea extract, nuts, and seeds. It is also fortified with folic acid, soy protein, and calcium-essential nutrients for a woman's daily nutritional needs. It was created to assist women to obtain more of the nutrients lacking in their current diets.

Other products marketed to boost women's diets include Women's Bread and Zoe Foods cereals. The founders were looking for foods that could replace hormone replacement therapy and help to alleviate menopausal discomforts such as hot flashes. Zoe Foods' Flax and Soy Clusters, for example, is a granola cereal with flaxseed and soy, providing phytoestrogens, fiber, protein, and omega-3 fatty acids.

Soy was found to have protective properties against heart disease, as well as breast and uterine cancers. Calcium is necessary to protect against osteoporosis. Higher calcium diets were also found to ease PMS symptoms. The requirement for calcium increases by about one third during pregnancy, and the requirements for lactation can be up to two thirds. Folic acid requirements also increase during pregnancy.

Because of the unique dietary requirements for pregnant women, marketing to those women may be a lucrative sidebar to the women's food market. According to the Whole Foods Market website, 78 percent of women having their first child are likely to change the types of foods they eat, and 63 percent of women who have given birth previously are likely to change the types of foods they eat. Vincent Foods is marketing a line of nutrition bars for women trying to get pregnant, are pregnant, or are breast feeding. The bar contains DHA and is called Oh Mama! Another company, Al Othman Production and Processing Company in Saudi Arabia, markets fortified milk for pregnant women, with folic acid and other nutrients "essential for the healthy growth of the fetus." There are pregnancy teas, such as Raspberry Leaf Tea, to strengthen and prepare the uterus for pregnancy and delivery.

Men are rarely targeted for new food products, and virtually none of their products address health concerns, according to a Prepared Foods report published in 2004. There is, of course, the "Hungry Man" line of frozen dinners from Swanson's, which are high in fat and sodium. There are multivitamins (such as One-A-Day Men's Health Formula) targeted to men, however, which claim to "support a healthy prostate and a healthy heart".

Considering the rates of osteoporosis in the U.S., calcium fortification would be a good idea for any male-oriented products. Osteoporosis is widely acknowledged as a condition affecting females, but the National Osteoporosis Foundation (NOF) reports 12 million men at risk, with men over 50 suffering from osteoporosis more than from prostate cancer. In total, 28 million women and 5 million men suffer from osteoporosis, suggesting a market for bone health for men as well. With the severe lack of products promoting any aspect of men's health, food manufacturers may wish to consider targeting the health-deprived male.

Is there a future market for women's foods? Bloggers are not so convinced that there is a market for these products. Some note the prices are too high. Others claim it is all hype. Still, food manufactures seem willing to gamble on women's food products.

Consider that Datamonitor noted 240 new products geared toward women were launched in 2005, compared to 71 in 2004, 93 in 2003, and 174 in 2002. Some advertisers have balked at targeting a product "for women," as they would rather have the consumer decide who it is for. Others, such as Quaker Oats (Nutrition for Women oatmeal) are unafraid to market directly to women.

The recent fascination with health and wellness may drive this market to further success, if marketers are careful about how they present their products to women.

For example, in America the famous cola soda producer, makes a red colored soda that is colored with Red 40 and Yellow 6. In the U.K. that same soda manufacturer uses natural products like pumpkin and carrot extract to obtain the red color in that same beverage. Likewise, the golden arched fast food company's strawberry sundaes are colored with Red 40 in the U.S., whereas in the U.K. real strawberries are used (Common Dreams).

While saving money is fine, there are some significant health effects as a result of the chemistry of food dyes and artificial coloring, especially for the target consumers, our children who will use that food the most.

The artificial food color dyes in food has been shown to have a significant effect on hyperactivity in children, and isn't restricted to affecting those with ADHD. In a study that involved 153 three year old children, and 144 eight to nine year olds, researchers found that children given the drink containing sodium benzoate and one of two artificial food color dyes and additives had a significant effect on the children's global hyperactivity aggregate (Nordqvist). This becomes especially problematic in the school performance of children as it bleeds onto children's abilities to excel in many areas of academic performance. Schools that have experimented with removing all junk food have seen landmark improvement in student behavior and academic performance simply by making healthy choices and serving additive-free lunches and snacks.

While children may beg and plead for the superbly marketed additive-filled children's foods, for their own sake it's best to avoid them. If your regular supermarket doesn't carry alternative options, health foods stores will often carry children's foods that are naturally colored with natural food dyes. This way they are getting the visual stimulation of the artificially colored foods without the adverse effects. With the constantly rising rates of ADHD, we may need to look closer at what is causing this behavior. If this challenge to our children's learning can be avoided naturally, by making healthy food choices instead of treatment with harmful drugs, maybe laying off the favorite cartoon fruit snack is worth it. Nature also provides some pretty colorful foods. Whenever possible make healthier choices and choose natural foods.

Jamaican Food Recipes - Rice and Peas

The most Jamaican of Jamaican food recipes has to be Rice and Peas. The world may know us for jerk chicken, but Rice and Peas is our comfortable old friend that we just cannot do without.

We eat it so often that it has become known as our "Coat of Arms". Ask a Jamaican about Sunday dinner, and the words "Rice and Peas" will almost definitely be in the answer. Some of us will eat it every day, and with every type of meat. Or with just gravy. Or all by itself.

Other countries in the world have variations, but none is exactly like ours, made delicious with coconut milk and the perfect blend of seasonings.

Before powdered and canned coconut milk and canned peas came on the market, the preparation of rice and peas was a lengthy process. A dry coconut would have to be split, the coconut meat taken out and grated, then put through a sieve and the milk squeezed out. Some people still prefer to do it this way, but in addition to being time consuming, grating coconut is not easy on the fingers. So those of us who treasure our hands are grateful that we have easier alternatives to grating!

Ready to cook?

Jamaican Rice and Peas

2 cups parboiled rice1/2 cup red peas, dried or canned4 cups water1 50g sachet of coconut milk powder, or 1/2 of a 400ml can of coconut milk1 tsp salt1 small onion, chopped1 stalk escallion (crushed)1 sprig thyme1/4 tsp pimento (all spice)pinch of black pepper1 whole green scotch bonnet pepper (or other hot pepper)

If using dried peas, soak them for a few hours (or overnight) in water to soften. Boil peas in cold water until tender. Pour off stock from peas and measure. Add enough water and coconut milk/coconut milk powder to make 4 cups of liquid, and add to peas.

If using canned peas, there is no need to cook them beforehand. Just add the four cups of liquid as described above.

To the mixture of peas, water and coconut milk, add all the seasonings and spices. Allow to simmer for 10 to 15 minutes.

Add the rice to this mixture, and stir well. Increase flame until liquid boils. Then reduce heat and cover. Simmer until rice grains are tender. Apart from the first stir, try not to stir the mixture again while cooking, as this might make it sticky.

A delicious alternative to red peas is gungo (pigeon) peas. This version is especially popular at Christmas time when gungo is in season. Use canned or green gungo peas. There is no need to soak green gungo. Merely boil until tender, then continue the recipe as described.

Rice and Peas makes a nutritious, filling and tasty accompaniment to a wide array of meat dishes.

It also makes a good meal for vegetarians, as the peas provide a lot of protein.

Food - What is Milk?

There is strong evidence that proves that milk has played a very important role in the history of man. There are early records that frequently mention that milk and milk products were part of a man's everyday life from childbirth until old age. It was in the year 1922 that a temple near Babylon that was thought to be 5000 years old was discovered by a British-American expedition. In this particular temple can be seen painted walls with different milking scenes of the local people. On the mural, some men are depicted milking cows. The positioning of the milker is peculiar because they milk the cows from behind it instead of from the right, like the dairymen of modern times do. The milker is shown sitting on a milking stool. Another scene that is painted on the wall is men straining the milk into a certain container on the ground. There is also a third group of milkmen depicted collecting the strained milk into large stone jars and sealing them up. Another proof that attests to the role of milk in society is the book of Exodus in the Bible. It is described in Exodus 3:8 that Palestine is the Promised Land which was "flowing with milk and honey". In the Bible, milk stands for riches and abundance.

Every single human being has consumed milk at at least one point in life. We all know what it looks like. But what is milk? Milk is the white liquid that is especially produced by the female species of warm-blooded animals that they use to feed their young. Warm-blooded animals that produce milk are called mammals. Mammals have udders or mammary glands where blood that is pumped by the heart passes through. The mammary glands are specialized glands that have the ability to separate different substances from the blood and combined them into the substance we know as milk and then excrete them. To make 1 pound of milk, it takes 150 to 500 pounds of blood to pass through the udder.

Nowadays, the most common sources of milk used for human consumption are the cow and the goat. However, many people still get milk from other animals that are native to their land. In India and Central Asia, they drink the milk of the water buffalo and the zebu. They also milk camels, yaks and horses in Asia. The sheep provides milk for the people of Asia and Europe. Eskimos and the Laplanders use the reindeer and the caribou.

Milk contains several hundreds of chemical components. Even today, scientists are constantly finding something new in milk. Milk is best known for its good taste, high quality and high content of phosphorus, protein and most especially calcium. Since milk is a natural substance, it is easily broken down and digested making the calcium, phosphorus and other nutrients effortlessly available to be used by the body. Milk contains important vitamins needed for growth and normal functioning. It has large amounts of Vitamin B2 or riboflavin and some vitamin A. Some of the components of milk are only found in it and not anywhere else. These are the Milk Fat, Milk Sugar or Lactose and Casein, which is the major milk protein.

Kids' Favorite Foods

If you're a parent, you know that getting your finicky kid to eat is like trying to push a bolder up a mountain of molasses. It isn't easy. A kid's menu, at best consists of about five or six things that he or she will eat. So what's a parent to do? Well, at a recent survey taken in a small US town, about 100 kids gave the answer to their five favorite foods, not counting desserts. While this survey no way dictates that all kids will answer the same, this should give you a pretty decent idea of what you're kid will eat if you're having problems getting food in his or her mouth. So without further ado, our top five kids' goods.

Coming in at number 5 was no surprise. Spaghetti and Meatballs was the overall number 5 choice. Kids seemed to like this more out of the can than home made, however. And no fancy sauces like Marinara. Just plain out tomato or meat sauce was all they needed. Plus, no grated cheese on top. And not too many meatballs. Just 3 or 4 would be enough. Serving your kid a plate of spaghetti and meatballs would be more than enough to put a smile on his or her face.

In the number 4 slot was another food that was no surprise. Hamburger on a bun was a sure winner. Again, nothing fancy as far as condiments. No onions was big on the list of yucks. Kids absolutely hate onions and don't want them anywhere near their hamburger. Just some ketchup is all they require. And the buns have to be hamburger buns. No regular hard rolls and certainly NO seeds. Also, no whole wheat buns or rolls.

The third most popular meal on the menu was the hot dog. It was interesting to see that the hot dog was more popular than the hamburger, but not by much. As for how they liked their hot dog, that varied quite a bit. Some kids liked them just with mustard. Others preferred mustard and sauerkraut. And then there was that group of kids who enjoyed their hot dogs with ketchup. Nobody seemed to like relish or anything fancy on their hot dog and NO cheese dogs. That was another big yuck.

Just missing the number top spot and coming in at number 2 was fried chicken. Parents, don't bother making this at home. Overwhelmingly, kids voted on Colonel Sanders Kentucky Fried Chicken and white meat only. And don't forget the biscuit that comes with it. They said without the biscuit it isn't as good. Makes you wonder if they loved the biscuit more than the chicken. Oh and the extra crispy gets a big thumbs up.

Finally, coming in at number 1 was macaroni and cheese. Again, don't try making this at home. This has to be, almost unanimously, Kraft Mac And Cheese. And of course no mac and cheese dish is complete without pouring ketchup all over it. By the time they are done with the ketchup you can just about see the mac and cheese.

And there you have it. The top 5 favorite foods of children. So if you're having trouble getting your kid to eat, you might want to start with these. If you need other favorites outside the top 5, at number 6 was pizza and at number 7 was peanut butter and jelly. Rounding out the top 10 was bologna at 8, salami and cheese at 9 and grilled cheese at 10.

Have you ever been to an American Indian restaurant? Even though I do not know the exact number, they do exist. Some people assume the cuisine from the indigenous community has been lost. That is so far from the truth. They actually number more than most people think. Let me try to explain...

Some of the most succulent foods I have ever eaten is American Indian. So many different flavors to tantalize the palate can be found in these fanciful little places. The herbs (sage, cayenne, mesquite) mingle to cause an infusion of bursting distinctions for your mouth! How can anyone avoid trying the masterpieces created in these talented cafeterias?

Roast Beef tenderloin with Butternut squash, is so very delicious! I can almost taste the smoothness of this dish as I reminisce. This is a standard favorite of mine! I believe you would love a stew made with zucchini, summer squash, corn and beans. It melts in your mouth. Let me throw in, that a single course I truly like are tortillas!

Another admired dish is fry bread. In some regions it is called "squaw" bread. In some places honey is poured over the finished course. Other ways to enjoy fry bread are with powered sugar, cream, or even with simmered stew. However one likes it, eating this mouth watering fare will make your tongue crave more!

One other tasty meal is called "Chicken Nachos." Made with corn tortillas, a list of fantastic nourishment is stacked on top. The ingredients can be: tomatoes, onions, garlic, peppers, chicken, rice, the list goes on and on. Finally, a hot, gooey river of cheese is poured on top. This is so very yummy!

Some do not know that tomatoes, potatoes, turkey, and squash were staples readily found in America (when Europeans entered). Buffalo, persimmons, corn, even cocoa were part of the First Peoples way of life. They were very intelligent in knowing what was good to eat and what was not. We should be thankful they passed their knowledge onto the rest of us.

Now, I do want to let you know, that I am not against other types of cuisine. It is simply my opinion, that American Indian food is my all time number one. I do not claim to be an expert or any type of professional. This is just from the experience of my taste buds. I have a tongue that speaks many different languages. It definitely enjoys a variety of textures and tastes! So far as I know, it has never lied to me!

I have traveled extensively across the American nation. I will not point out one American Indian restaurant over another. I feel they each have something to contribute to the greatness of their history. I do believe it is in your best interest to taste the food of these miraculous diners. You will give your appetite a nice change. You may find that food with which you are familiar, can be delightful made a different way. Enjoy your journey!
